Food in Azerbaijan

Azerbaijan’s food scene is layered, regional, and shaped by a mix of Persian, Turkish, and Caucasian influences. In Baku, restaurants present national dishes in both casual and refined formats, but the core elements remain consistent: rice-based dishes like plov, grilled meats, and herb-heavy accompaniments. Outside the capital, food becomes more localized, often reflecting regional specialties and cooking methods. Meals are typically shared, with multiple dishes placed at the center of the table. Bread plays a constant role, and tea culture is deeply embedded, often extending meals into longer social experiences. Flavors balance richness with freshness, using herbs, dried fruits, and spices in measured ways. The result is a food scene that feels both layered and cohesive, where influences are integrated rather than competing.
