Liberia Food

Liberian food is built around rice as the central component, with rich, heavily seasoned sauces served on top. Jollof-style rice dishes appear, but daily meals often revolve around plain rice paired with stews like groundnut (peanut) soup, palm butter, or cassava leaf sauce. Proteins include fish, chicken, or beef, typically cooked into the sauce rather than served separately. Spice levels can be high, with chili peppers adding heat across many dishes. Fufu and dumboy (pounded starches) also appear as alternatives to rice in certain meals. The structure stays consistent: a base starch with a bold, flavorful topping. Variation comes from the sauce rather than the overall format.
