Madagascar Food

Rice (vary) anchors nearly every meal in Madagascar, served with laoka, which can include zebu (beef), chicken, pork, or fish with vegetables. Romazava, a broth-based dish with meat and leafy greens, is one of the most recognized preparations. Ravitoto combines shredded cassava leaves with pork, often served with rice. Along coastal areas, seafood like fish, shrimp, and crab appear more frequently, usually grilled or stewed. Mofo gasy (rice flour pancakes) are common for breakfast or street consumption. The structure of meals is consistent: a large portion of rice with smaller portions of protein and vegetables, repeated daily with variation in accompaniments.
